Professor Mike Peck is the Deputy Programme Leader for Gut Health and Food Safety at the Institute of Food Research in Norwich, UK.
He received BSc, MSc and PhD in Wales, and then undertook post-doctoral research in Gainesville (Florida) and Norwich.
He was appointed a Research Leader at the Institute of Food Research in 1992, and his own research programme is mainly focused on basic and strategic aspects of the physiology and molecular biology of Clostridium botulinum. This work is presently concerned with neurotoxin formation and its regulation, spore germination and lag phase, and strain variability.
He spends much time applying the findings of his research to deliver social and economic impact (often in collaboration with mathematicians). For example, he works with industry and regulators to deliver safe minimally heated refrigerated foods.
He holds Professorships at the University of Nottingham and the University of East Anglia, and has published more than 150 refereed publications and book chapters.
