Paw Dalgaard has Ph.D. in Food Preservation and Statistics (1994) from The Royal Veterinary and Agricultural, University, Copenhagen, M. Sc. in Food Science (Copenhagen, Denmark) and M.Sc. in Fermentation Technology (Nancy, France).
He is Head of the research group ‘Predictive Microbiology’ and studies microbiological quality and safety of fresh and lightly preserved food at National Food Institute, Technical University of Denmark.
The overall aims of this research are to obtain insight into the quantitative microbiological ecology of fresh and lightly preserved food and to use this information for development of new methods and strategies to determine, predict and improve the safety and shelf-life of products. The Seafood Spoilage & Safety Predictor (SSSP) software has been developed to facilitate dissemination and application of results from the research group.
